Ravioli Filling: Spinach, Ricotta, Garlic, Herbs, Seasoning, Parmesan .
Dough: Quinoa, Rice, Water, Salt. 
 
Each batch of dough is carefully weighed, kneaded and then rolled to order. Sheets are cut and filled with a flavorsome mixture of garlic sautéed, Ricotta and Parmesan cheese. The pasta is then briefly air-dried, which gives the pasta a rustic and porous texture that holds sauce beautifully.
 
Pairs best with: Classic Tomato & Basil / Confit Garlic Cream Sauce/ Roasted Mushroom and Morel Sauce
Each Pasta paired with a sauce comes along with some freshly grated parmesan cheese.
 
 
**Fresh Pasta can be frozen up to 3 weeks. In this case, drop the frozen pasta directly into a boiling pot of salted water and cook for an extra minute. Toss in your pre-prepared sauce. Serve immediately and enjoy!**
